Against All Grain's Slow Cooker Beef Chuck Chili

I have had this before and it was amazing. Danielle Walker has once again outdone herself. This chili will taste great once it is completed and will taste even better when you re-heat leftovers the next day. This one promises to be a Paleo winner!

To start, I set up shop with cutting boards, large skillet, knives, teaspoons, tablespoons, can opener and place a mixing bowl next to the slow cooker.


Before anything else, I slice the meat since that is the most time consuming portion.

                                                    2.5-3 lbs of Grass Fed Shoulder 

Slice it all up in to 1/2 inch cubes like this:



After this is sliced and set to the side, I turn the slow cooker on low & move to the non-meat ingredients.

                                                 First, I take the Two Red Bell Peppers
 Remove seeds then toss in the Veggie Chop (aka the best kitchen tool on earth. Find for under $20 on Amazon  HERE ) Before chopped:

I toss that in a bowl 
 Then do the same with One Yellow Onion

Mix them together: 

Next, add 28-ounces of Chopped Tomatoes


This next step is when I start to add ingredients to the slow cooker. 
Add 1 1/2 cups of Beef Broth
2 Tablespoons Tomato Paste
2 Cloves Minced Garlic
1 Bay Leaf
2 1/2 Tablespoons Chili Powder
3 Teaspoons Sea Salt
2 Teaspoons Cumin
1/2 Teaspoon Paprika
1/2 Teaspoon Curry Powder
1/2 Teaspoon Cinnamon
1/4 Teaspoon Black Pepper
1/4 Teaspoon Cayenne Pepper
1/4 Teaspoon Red Pepper Flakes

Stir this all together in the slow cooker and get your pan heated at medium/high with

2 Teaspoons Coconut Oil

Add the shoulder


Brown all side for about 10 minutes total


Then scoop out all the meat and put in to the slow cooker. This should leave a little fat/grease in the pan. Stir it all and leave on low for 6 hours.


At the very end, stir in 1 Ounce of Unsweetened Chocolate and Garnish with Fresh Cilantro & Red Onion. 

It starts to look nice and thick after 6 hours. Don't forget the chocolate! It really makes a surprising difference. Genius addition! 




The prep time calls for about 15 minutes. I think it is more like 30 minutes. Other than that, the ingredients and photos in Danielle Walkers book match perfectly and it is as tasty as you would hope. This meal is great the next day and the day after that!... IF you have leftovers ;)
